Pistachio Crusted Fish

The green colour of the Pistachio Nut is most predominant with fish dishes: quite a colourful contrast. The flavor of the Pistachio Nuts is very definite with fish.

Ingredients

  • 1 egg, beaten

  • 1/2 cup Murrungundy Pistachios, chopped

  • 1/3 cup bread crumbs

  • 1/4 cup fresh parsley, chopped

  • Season with salt and pepper

  • 4 fish fillets

  • 4 teaspoons butter, melted

Method:

Place egg white in a shallow bowl.

In another shallow bowl combine the pistachios, bread crumbs, parsley, pepper and salt in shallow bowl.

Dip fillets in egg white, then pistachio mixture.

Place fish on a baking sheet coated with cooking spray. Drizzle with butter. Bake at 230° for 8-10 minutes or until fish flakes easily with a fork.
