Murrungundy Pistachio Nut and Avocado Pate

Pistachio nuts and avocados would have to be the most tempting of foods. Try this quick pate and make sure you have a cold white wine or an icy beer on hand.
Method:
Blend or process avocado, cheese, shallots, garlic and chilli until smooth. Line 2 mounds (1 cup capacity) with plastic wrap, sprinkle Murrungundy Pistachio nuts into base of each mould, spoon in avocado mixture. Cover, refrigerate for 3 hours or until set.
Just before serving, unmould the pate remove plastic, sprinkle lightly with parsley.
Ingredients:
1½ cups avocado, mashed
125g packet cream cheese
2 green shallots, chopped
1 small clove garlic, crushed
1 teaspoon lemon juice
¼ teaspoon chilli powder
2 tablespoons Murrungundy Pistachio nuts, chopped
1 teaspoon fresh parsley, chopped
